I had considered posting this at one point just for the photography, but his shrill, nagging tone and Dr. Bronner's name-dropping made me go buy and eat vienna sausages instead.

They were deliciously unsanctimonious.

How appealing is anything going to look at that level? I imagine there are many arguments to be made against eating processed meats, but because of what they look like up close has to be one of the dumber ones.

The salami pictures made me hungry for real, high-quality deli salami. The stuff he photographed tastes as bad as it looks.

Sausage, however... some nice Bob Evans hot breakfast sausage... yum yum!

Could the black spots be caused by charred edges? I'm assuming the meat isn't, like, raw right? Or is it?

I wonder why humans are sort of repulsed by that sort of thing, I mean lots of wild animals eat raw meat, but raw, unprocessed meat is definitely less healthy then cooked meat, right? Is it possible that humans evolved a distaste for raw meat so quickly? Or is it just social conditioning on my part?

I opened this up hoping for a fascinating exploration into the structural differences of a coarse grind vs an emulsified sausage, or the effects of using different curing products on myosin binding. Instead, I got page after page of "ZOMG did u know that SAUSAGE has FAT in it??!!!"

Little known fact: If you make it to the last page, you find out that his camera is powered entirely by his sense of self-satisfaction.

I'm digging the gross-out photos, but the sanctimony sucks out all the fun. It's like going to an awesome, scary haunted house and then discovering midway that it's run by holy rollers trying to convert me. Then it's not scary, it's just "hey, quit yer preachin'."

I call it "Mystery Meat" because it's a mystery to me why anyone would want to eat it...

Welcome to your food, Mr. Adams. That sausage would look the same whether it came from a Jimmy Dean factory, or you ground and cased it in your own kitchen from the hog you hand-raised and slaughtered in your back yard.

delmoi - I kinda buy into "disgust theory" where things that are "disgusting" have been things that were signs of disease or infection. Being innately repulsed by anything potentially infectious is a positive selective trait.

Black spots on meat = fungal growth on rotting meat, or blood clots from old wounds (potential latent bolus of infectious material), or ...

Given the number of cultures today where raw meat is enthusiastically eaten, I would say the latter.

I'm with oneirodynia. I find all those things delicious. The main problems with raw meat are that it's very difficult to preserve, it can very quickly become a home for harmful elements like salmonella, and sometimes it's hard to digest, because cooking helps break things down. But all of these are practical matters, and have nothing to do with the evolution of human tastes.

To get this photo, I simply sliced one of the sausages with a common knife, then pointed the camera at one end.

I had to wash my hands with Dr. Bronner's soap after this picture, since my fingers reeked of dead meat.

Wait until he finds out his entire body reeks of live meat.

Not that processed meat is all that great, but the guy seems like he just found out what "fat" was a week ago and now his mind is constantly being blown. Also, someone should definitely email this guy and tell him he doesn't have enough "Fair Use" provisos or smug pictures of his fucking face.

In actual Mystery Meat news, I heartily suggest everyone look at the Mystery Meat chart from Biggest Secrets. They put a little check next to each odd (or not-so-odd) ingredient per mystery meat, be it regular skeletal meat or coarsely ground horse testicles. Spam has but one check (skeletal meat); head cheese has a few; and chorizo is basically like cleaning the floor of a slaughterhouse and stuffing it into a tube.

Chorizo also happens to be delicious.
