You may or may not be aware, but there is a small community of folks that build and sell electronic instruments through places like Etsy and Ebay. A lot of them get into it through circuit bending or custom guitar pedals and then gradually work their way up to original instruments. You may have success reaching out to some of these people for suggestions or collaboration, especially if you want to go forward with your idea of open-sourcing the instrument.
